Stir Fry

Stir Fry is a great (and tasty) way to eat a serving or more of vegetables. You can use vegetables of your choosing to make the dish your own! Serve it over brown rice for added fiber, nutrients, and protein. All you need is some vegetables, rice, a little toasted sesame oil, and some low-sodium soy sauce. Sesame oil can be found in most stores now days in the section with oil. I picked mine up for about $3. It is more expensive per ounce but you only need a little bit.

If you would like to add meat, chicken breast would be great in this. Just cut up the chicken into bite size pieces and brown it prior to cooking the veggies. Bam- Homemade Chinese take out!!

Ingredients
  1. 4 TBS toasted sesame oil
  2. 2 TBS low-sodium soy sauce
  3. 4-5 sliced mushrooms
  4. 1 cup shredded cabbage
  5. 1 clove garlic minced
  6. ½ small onion sliced
  7. ¼ cup chopped carrot
  8. ¼ cup chopped celery
  9. ¼ cup frozen edamame
  10. ¼ cup sliced water chestnut
  11. 1 egg
  12. 1 cup dry brown rice
  13. Low-sodium chicken or vegetable stock (optional)
  14. Sesame seeds (optional)
Instructions
  1. Cook your rice as directed on package. Use chicken stock or vegetable stock to cook rice in instead of water for added flavor and nutrients if desired.
  2. Warm 4 TBS toasted sesame oil in a pan. Add carrots, moving around to cook about 1 minute. Add the rest of the veggies except for the cabbage. Cook an additional 3-4 minutes.
  3. Add cabbage and stir to combine. Turn heat off. Crack egg into the center of the hot pan. Rapidly and continually move the egg around the pan to cook so that it does not stick to the pan.
  4. Once the egg is cooked, add 2 TBS of low-sodium soy sauce and stir to combine. Test for taste and adjust accordingly.
  5. Serve stir-fried veggies over rice.
